Parmesan Herbed Chicken

Inspired from trying the Pan-Fried Chicken Encrusted in Salted Eggs at Zong, I tried to create my own breading/flavoring. The ordinary dish needed a little variety so I took all available herbs and condiments available in the kitchen at that moment... and this is what came out: YUMMY. Too bad that I wasn't able to take a photo of it. Maybe the next time I will.

Ingredients:

cornstarch or potato flour
grated parmesan
dried basil
dried italian seasoning
salt
pepper
eggs
chicken (cut up for frying)
oil for frying

Procedure
Season the chicken with salt and pepper. Set aside.
Mix the grated parmesan and herbs. You may substitute basil and italian season with a different herb of your liking.
Beat the eggs. Set aside.
Dredge the chicken with the seasoning mix. Coat generously. Dip in the beaten eggs. Lightly coat with cornstarch or potato flour.
Deep fry in oil (or pan-fry) the chicken until done. Drain excess oil over paper towels.
Serve as is or with sweet-chilli sauce.

Chicken Basil

I wanted to try my hand with Thai cusine. For starters, I decided to try something easy to make and readily available at home. I must give myself a pat on the back. It tasted how it should be. (But mom couldn't stand the heat of the chillies.)

Ingredients

2 tbsps. minced garlic
2 Tbsp. minced onions
1 tsp. cooking oil
1-2 chicken breast, deboned and cut into strips

1/2 cup slightly packed basil leaves, removed for stems

1 1/2 - 2 tbsp. fish sauce


Heat oil in wok and saute garlic and chillies. Add chicken and stir until the juices have evaporated. Once the chicken is cooked through, add in the basil and fish sauce. Serve over steaming rice.

Banana Blueberry Bread

Fresh blueberries are not readily available in my area, so I replace the 1 cup fresh blueberries with 1/2 canned blueberries and lessened the sugar by 1-2 tablespoons.

Ingredients


1 1/2 cups all purpose flour
2/3 cup - 2 tbsps. sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup oatmeal, quick cooking
1/3 cup canola oil
1 teaspoon vanilla
2 eggs, slightly beaten
1 cup bananas, ripe, mashed
1/2 of canned blueberries

Directions

Preheat oven to 350ยบ F. Grease loaf pan.
In a large mixing bowl combine flour, sugar, baking powder, baking soda and salt and stir in the oatmeal.
Add eggs, oil and bananas. Stir until just combined.
Pour 1/2 of prepared batter into pan and cover with the blueberries. Then cover blueberries with remaining batter.
Bake 1 hour or until a toothpick inserted into center of bread comes out clean. Cool in pan about 10-15 minutes. Remove from pan and cool completely.
Wrap tightly in foil or plastic wrap and cool in refrigerator before serving.
